VALDESPINO TÍO DIEGO
Información sobre este vino:
Valdespino Amontillado Tío Diego is a generous wine from the D.O. Jerez-Xérès-Sherry that embodies, with an elegance bordering on aristocratic, the great tradition of the bodega Valdespino. Born in the surroundings of Macharnudo Alto and raised under the slow dictates of the criaderas and solera, this amontillado presents itself as a piece of liquid craftsmanship: severe in spirit, noble in form, and deeply expressive in its silence.
Its character harks back to the old school of Jerez, where time does not age the wine but rather polishes it until it becomes more lucid. Here biological aging and the subsequent oxidative aging intertwine with the precision of an antique clock, giving rise to a style of great definition, dry and with a complexity that seems to unfold in layers, as if each sip drew back a different veil.
This is a generoso wine of refined profile, with the gravitas befitting a well-born amontillado and the stature of a long-aged wine. Its personality combines the salinity of albero soil, the depth of wood and a sober distinction that place it among the most intellectual and memorable table wines of the Marco de Jerez.
It comes from Macharnudo Alto, one of the most renowned vineyards in the Marco de Jerez, where albariza soil and altitude favor wines of great tension, finesse, and aging capacity. The vineyard imprints on the wine a trace of salinity, muscle, and depth that is almost scenic. The raw material, based on Palomino Fino, reflects a sober and demanding origin, capable of transforming the austerity of the environment into elegance and length. It is a terroir that does not embellish: it carves.
