La Servil

Información sobre este vino:

La Servil is a red wine from Bodega Cerrón, protected under the D.O. Jumilla, expressed with the stern elegance of great Mediterranean wines: concentration, freshness, and a personality that doesn’t need showy gestures to command respect. Its profile moves between the energy of Monastrell and a mineral subtlety that adds depth, as if the dry-farmed landscape had been captured inside the bottle with almost sculptural precision.

As a matured wine, it shows measured ripeness—never showy—polishing the fruit without fully domesticating it. It’s a medium-high-bodied red with a firm structure and a vibrant pulse, where ripe black fruit lives alongside spiced notes, Mediterranean herbs, and a balsamic echo that seems to lift the wine above mere tastiness. There’s an austere, almost telluric nobility in it that suits it wonderfully.

La Servil doesn’t chase easy seduction; it prefers depth, texture, and that sense of a serious wine, lovingly crafted, which unfolds little by little in the glass. The winery gives it a highly recognizable identity, defined by varietal purity and by discreet yet precise aging—capable of adding definition, lift, and a brushstroke of complexity that broadens its character.

Comes from Jumilla, where the vineyard and the climate shape a deeply Mediterranean expression. Altitude, poor soils, and the influence of a dry environment favor controlled yields and a very noticeable natural concentration. That rugged geography, almost mineral in the way it speaks, translates into grapes with great personality, capable of delivering wines with tension, freshness, and character—far from any industrial ease.
