UBE PAGANILLA
Información sobre este vino:
UBE Paganilla is a white wine from the Bodega Cota 45, a wine with an almost liturgical air that seems to be born between the salt, the patina of time, and the luminous dust of the albariza. Its style is set in a noble, deeply Andalusian territory, with the serenity of wines that don’t need to raise their voice to command respect. The aging classification, in this case, moves into the realm of a medium-aged white wine, refined with that point of tension and mystery that only great wines marked by the veil of flor and by the sensitivity of someone who knows the vineyard as if it were a score can provide.
The hand of Cota 45 can be felt in every gesture: there is no artifice, but rather a precise reading of the landscape, of the vineyard and of the Palomino Fino grape. UBE Paganilla does not seek to seduce with exuberance, but with depth; it is a white with a marine soul, chalky bone and an almost ascetic elegance. In its character there is something of an unfortified old manzanilla, something of the memory of the Marco de Jerez, but filtered through a contemporary finesse that makes it intellectually appetizing and sensorially vibrant.
All in all, it is a wine of great personality—one of those that seem to speak with the table in a low voice and yet still leave a clear mark. Its profile combines precision, salinity, texture, and a freshness that is not youthful but mineral, as if the wine had learned to breathe to the rhythm of white earth and the Atlantic wind.
It comes from the historic Paganilla estate, in the Marco de Jerez, an enclave of albariza soils rich in marine fossils that imprint the wine with a frank, Atlantic and deeply mineral personality. The plots show soils of different character, between lentejuelas, lustrillos and compact tosca, providing nuances of tension, sapidity and complexity. The vineyard, of notable age, works with controlled yields that favor concentration and expressive clarity.
